Yellow Chicken Curry with Kaffir Lime and Cucumber

Warm yellow chicken curry with kaffir lime, coriander and cucumber.


Ingredients

RICE

  • 1 1/2 cups jasmine rice
  • 2 1/4 cups water

CURRY

  • 1 tablespoon oil (e.g. peanut, canola, soy)
  • 1 brown onion, finely diced
  • 2 cloves garlic, minced
  • 1 inch ginger, finely grated or chopped
  • 1-2 tablespoons yellow curry paste (depending on heat preference)
  • 1 can coconut milk
  • 1 kaffir lime leaf
  • 1 can crushed tomatoes
  • 1/3 cup water
  • 400g agria potatoes, scrubbed, diced 2cm
  • 600g chicken thighs, diced 3cm
  • 1 cup frozen peas, defrosted
  • 3-4 teaspoons fish or soy sauce, to taste
  • Juice of 1 lime

TO SERVE

  • 1/4 cup coriander
  • 1 telegraph cucumber, sliced

Steps

  1. Combine rice, water and a pinch of salt in a large pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid at any time during cooking.
  2. Heat oil in a large pot on medium heat. Cook onion, garlic and ginger until onion is soft, 3–4 minutes. Add curry paste and ¼ cup coconut milk and cook, stirring constantly, for 1–2 minutes until mixture is smooth and fragrant.
  3. Add remaining coconut milk, kaffir lime leaf, tomatoes, water and potatoes and bring to the boil. Reduce heat, cover partially and simmer for 8–10 minutes or until potatoes are almost cooked through.
  4. Stir chicken into curry, replace lid, and continue cooking on low until chicken and potatoes are cooked through, about 10 minutes. In final 3 minutes of cook time, add peas to heat through. Season to taste with fish or soy sauce and lime juice. Remove kaffir lime leaf before serving.
  5. Garnish curry with coriander leaves. Serve with rice and cucumber in middle of the table for everyone to help themselves.
