In a bowl combine all patty ingredients with 1\/2 tsp salt. Season with pepper, mix well, then use 1\/4 cup worth of mixture to shape patties, about 1.5cm thick. Allow to firm up in fridge for about 10 minutes.<\/li>\n<li>Cook patties. Heat 1 tsp oil in a non-stick fry-pan on medium heat and cook patties for 2\u20133 minutes each side, until golden and cooked through.<\/li>\n<li>Prep serving ingredients, if using. Return same pan to medium-high heat and stirfry corn for 2\u20133 minutes, until tender and golden.<\/li>\n<li>Add patties to lunches across the week for extra protein, nutrients and fibre.
