This tasty lunch makes the most of odd bits of veggies you might have leftover. Combined with curry powder, mustard and yoghurt dressing and boiled eggs this is a super moreish lunch.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*1Og6yS2waX4fRXDfGq4n5Q.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>Veggies<\/p>\n<p>1\/2 pack cauli pearls<\/p>\n<p>1\/2 broccoli, chopped into small florets<\/p>\n<p>200g red kumara, diced<\/p>\n<p>2 tsp curry powder<\/p>\n<p>Dressing<\/p>\n<p>75g yoghurt (half a small punnet)<\/p>\n<p>1\/2 tsp mustard<\/p>\n<p>To Serve<\/p>\n<p>4 eggs<\/p>\n<p>1 baby cos lettuce, leaves separated<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Preheat oven to 180\u00b0C. Bring pot of hot salted water to the boil.<\/p>\n<p>2. <strong>Prep veggies<\/strong>. Toss cauli pearls, broccoli, kumara, curry powder, 1 tsp olive oil and 1\/2 tsp salt together on a lined oven tray. Spread out into a single layer.<\/p>\n<p>3. <strong>Cook veggies<\/strong>. Bake for about 18 minutes, until golden and tender. Toss halfway.<\/p>\n<p>4. <strong>Cook eggs<\/strong>. Carefully place eggs in pot of boiling water and cook for about 10 minutes. Drain, run under cold water to cool and then peel. Slice eggs 1cm.<\/p>\n<p>5. <strong>Make dressing<\/strong>. Combine dressing ingredients in a large bowl.<\/p>\n<p>6. <strong>Finish salad<\/strong>. Once veggies and eggs are cooked, add to bowl with dressing. Gently toss to combine and season.<\/p>\n<p>7. <strong>Separate lettuce leaves<\/strong>.
