Combined with a serve of protein it\u2019s a perfect lunch or dinner.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*DMjCW5TBOQxTJBzXoi9Q8Q.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p><strong>Coconut lime dressing<\/strong><\/p>\n<p>100mL lite coconut milk<\/p>\n<p>Juice of 1 lime<\/p>\n<p>2 tsp rice wine vinegar<\/p>\n<p>1 tsp ground turmeric<\/p>\n<p>\u00bd tsp honey<\/p>\n<p>\u00bd tsp fish sauce<\/p>\n<p>Pinch of chilli flakes<\/p>\n<p><strong>Slaw<\/strong><\/p>\n<p>1 cup frozen peas<\/p>\n<p>\u00bd pack slaw<\/p>\n<p>\u00bd broccoli, finely chopped<\/p>\n<p>1 Tbsp coconut thread<\/p>\n<p><strong>To serve<\/strong><\/p>\n<p>2 portions pan-fried white fish, tofu or chicken breast<\/p>\n<p>Coriander leaves<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Prep dressing. Combine all dressing ingredients and \u00bd tsp salt in a blender and blend for about 30 seconds, until combined.<\/p>\n<p>2. Prep &amp; cook slaw. Cook peas in pot of boiling water for about 1 minute, until bright green and tender. Drain, rinse under cold water and drain again well. Combine in a bowl with slaw, broccoli and coconut. Toss through half the dressing.<\/p>\n<p>3. Prep protein, if desired.<\/p>\n<p>4. Serve slaw topped with your choice of lean protein.
