This yummy lunch is great for making in bulk to take to work!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*N270MuhM-irHJZiJob3GCQ.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>75g dry Vermicelli noodles<\/p>\n<p>Dressing<\/p>\n<p>1 Tbsp soy sauce<\/p>\n<p>\u00bd Tbsp rice wine vinegar<\/p>\n<p>\u00bd tsp sesame oil<\/p>\n<p>\u00bd tsp honey<\/p>\n<p>Pinch of chilli flakes (optional)<\/p>\n<p>Veggies<\/p>\n<p>250g mushrooms, thinly sliced<\/p>\n<p>1 cup frozen corn<\/p>\n<p>2 baby bok choy, end removed and separated<\/p>\n<p>1 tsp soy sauce<\/p>\n<p>To serve<\/p>\n<p>1 Tbsp sesame seeds<\/p>\n<p>4 boiled eggs<\/p>\n<p>1\u20132 Tbsp kimchi (optional)<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Cook vermicelli (if vermicelli isn\u2019t pre-cooked). Bring a full kettle to the boil. Place vermicelli in a heat-proof bowl with a pinch of salt and cover with boiling water. Leave for 5 minutes then drain.<\/p>\n<p>2. Make dressing. Mix together all dressing ingredients in a small bowl.<\/p>\n<p>3. Prep &amp; cook veggies. Heat \u00bc tsp oil in a fry-pan on medium-high heat. Add mushrooms and cook for about 2 minutes. Add corn and stir-fry a further 2\u20133 minutes. Add bok choy and soy sauce stir-fry a further 1 minute, until all veggies are tender.<\/p>\n<p>4. Serve vermicelli topped with veggies and drizzle with dressing. Top with kimchi, sesame seeds and eggs.<\/p>\n<p>Tip, to boil eggs\u200a\u2014\u200aBring a pot of salted water to the boil. Cook eggs in pot of boiling water for 6\u20137 minutes for soft-boiled (10 minutes for hard-boiled).
