Layer the salad with the leafy greens on top so they don\u2019t get crushed and the lentils in a separate container so you can heat them up and you\u2019re good to go!<\/em><\/p>\n<figure><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*c8a3VN8zdwIpIpSU2gN1fQ.jpeg\" alt=\"\" title=\"\"><\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>Lentils<\/p>\n<p>\u00bc onion, finely diced<\/p>\n<p>\u00bd carrot, grated<\/p>\n<p>\u00bd punnet mushrooms, thinly sliced<\/p>\n<p>\u00bd clove garlic, minced<\/p>\n<p>1 tsp cumin<\/p>\n<p>\u00bd tsp oregano<\/p>\n<p>1 tsp smoked paprika<\/p>\n<p>Pinch of chilli powder or flakes<\/p>\n<p>\u00be cup veggie stock<\/p>\n<p>\u00be can brown lentils, drained and rinsed<\/p>\n<p>\u00bd tomato, diced<\/p>\n<p>To serve<\/p>\n<p>1 cup frozen corn<\/p>\n<p>2 handfuls leafy greens, slaw or chopped lettuce<\/p>\n<p>\u00bd capsicum, diced<\/p>\n<p>\u00bd punnet cherry tomatoes, halved (or 1 tomato, diced)<\/p>\n<p>\u00bd avocado, diced<\/p>\n<p>\u00bd lemon or lime, cut into wedges<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li>Bring a full kettle of water to the boil.<\/li>\n<\/ol>\n<p>2. Prep &amp; cook lentils. Heat \u00bd tsp oil in a fry-pan on medium heat. Cook onion, carrot and mushrooms with a pinch of salt for 3\u20134 minutes, until beginning to soften. Add garlic, cumin, oregano, paprika, chilli and \u00bd tsp salt and cook for about 1 minute, until fragrant. Add stock, allow to bubble then add lentils and tomato. Cook a further 3 minutes, until heated through and liquid has evaporated slightly.<\/p>\n<p>3. Cook corn. In a heat-proof bowl, cover corn with boiling water and allow to cook for about 2 minutes. Drain well and season.<\/p>\n<p>4. Prep serving ingredients.<\/p>\n<p>5. Assemble bowls. Fill bowls with greens, corn, lentils, capsicum, tomatoes and avocado.
