This fresh plant based meal is sure to tickle your tastebuds\u200a\u2014\u200aideal for lunch on the go!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*3R8wshdAEnrinEVIA6TW8w.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 1<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p><em>Tofu<\/em><\/p>\n<p>140g \/ remaining tofu, diced 1cm<br \/>\u00bc tsp sesame oil<br \/>\u00bd tsp ground coriander<br \/>\u00bc tsp ground turmeric<br \/>\u00bc tsp ground all spice<br \/>\u00bc tsp freshly ground black pepper<br \/>Pinch of chilli flakes<br \/>Juice of \u00bd lemon or 1 lime<\/p>\n<p><em>Salad<\/em><\/p>\n<p>1 baby cos lettuce, thinly sliced<br \/>\u00bc red onion, finely diced<br \/>\u00bd Lebanese cucumber, cut in half lengthways and thinly sliced<br \/>\u00bc capsicum, diced 1cm<br \/>2 Tbsp chopped coriander<br \/>\u00bc tsp white wine vinegar<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li><strong>Prep tofu.<\/strong><\/li>\n<li>\n<strong>Make marinade.<\/strong> In a medium bowl, mix all of the marinade ingredients together until smooth. Add tofu and toss to coat.<\/li>\n<li>\n<strong>Prep &amp; make salad.<\/strong> Add all salad ingredients to a medium bowl with \u00bc tsp extra-virgin olive oil.<\/li>\n<li>\n<strong>Cook tofu.<\/strong> Heat \u00bc tsp oil in a medium, non-stick fry-pan.
