This quick and easy vegetarian meal is ideal for meal prep, and perfect to take to work for lunch.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*Gx8UouBRmKZ-hW5s_SL-2w.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 2<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>\u00bc cauliflower, cut into small florets<\/p>\n<p>\u00bd broccoli, cut into small florets<\/p>\n<p>\u00bd carrot, diced<\/p>\n<p>\u00bc red onion, cut into thick slices<\/p>\n<p>3\/4 x 400g can chickpeas, drained and rinsed<\/p>\n<p>1 tsp cumin seeds<\/p>\n<p>\u00bd x 180g pack halloumi, sliced or diced<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li>Preheat oven to 220\u00b0C.<\/li>\n<li>\n<strong>Prep &amp; cook tray bake.<\/strong> Toss cauliflower, broccoli, carrot, onion, chickpeas and cumin seeds with 1 tsp olive oil and \u00bd tsp salt on a lined oven tray (with a lip). Dot halloumi over veggies. Bake for 18\u201320 minutes, turning veggies once, until golden.<\/li>\n<li>Serve on plates.
