Great as a snack or with protein and leafy greens for a healthy lunch, this tasty recipe will become a staple for sure!<\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*7ymLH9xTLiwtuhBKm9YvVw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 1<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1\/2 broccoli, cut into florets<\/p>\n<p>1\/2 carrot, cut into chips<\/p>\n<p>1\/2 parsnip, cut into chips<\/p>\n<p>1\/4 cup Parmesan cheese, finely grated<\/p>\n<p>Pinch of dried thyme (optional)<\/p>\n<p>1\/4 tsp garlic powder<\/p>\n<p>1\/4 tsp black pepper<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Preheat oven to 210\u00b0C.<\/p>\n<p>2. Prep veggies. Toss on a lined oven tray with 1 tsp oil, Parmesan, oregano, garlic powder, pepper and 1\/2 tsp salt. Spread out evenly.<\/p>\n<p>3. Cook veggies. Bake for about 20 minutes, until veggies are tender. Season.<\/p>\n<p>4.
