These healthy fritters make for a great lunch, especially with a poached egg on top.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*GxbjPdfTfaAg9lO8RP2Xcg.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>Fritters<\/p>\n<p>1 1\/2 cups frozen corn<\/p>\n<p>1\/2 courgette, grated and liquid squeezed out<\/p>\n<p>2 eggs<\/p>\n<p>1 spring onion, thinly sliced (optional)<\/p>\n<p>1\/2 tsp baking powder<\/p>\n<p>1\/3 cup flour (e.g. buckwheat, wholemeal)<\/p>\n<p>Pinch of chill flakes (optional)<\/p>\n<p>Tzatziki<\/p>\n<p>1\/2 Lebanese cucumber, grated<\/p>\n<p>1\/4 cup yoghurt<\/p>\n<p>1 Tbsp mint, chopped<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Prep fritter batter. Mix all fritter ingredients in a bowl with 1\/2 tsp salt until combined.<\/p>\n<p>2. Cook fritters. Heat 1\/2 tsp oil in a non-stick fry-pan on medium heat. Add about 2 Tbsp mixture per fritter to pan and cook, in batches, for 1\u20132 minutes each side, until golden and cooked through. Use another 1\/2 tsp for second batch. Season cooked fritters.<\/p>\n<p>3. Prep tzatziki. Squeeze grated cucumber to rid any excess water, then add to a bowl. Fold through yoghurt and mint and season.<\/p>\n<p>4.
