With all the delicious, cheesy flavours of eggplant parmigiana but low in calories and carbs, this is a recipe you\u2019ll keep coming back to!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*-hImvHquGutYrs42IAjitg.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1 eggplant, sliced into 1cm thick rounds<\/p>\n<p>2 Tbsp tomato paste or pur\u00e9e<\/p>\n<p>1 tomato, thinly sliced<\/p>\n<p>1 handful baby spinach<\/p>\n<p>1\/2 cup grated Parmesan cheese Basil<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Preheat oven to 210\u00b0C.<\/p>\n<p>2. <strong>Prep eggplant<\/strong>. Spread eggplant rounds out on a lined oven tray, so there\u2019s no overlap. Brush with 1 1\/2 tsp olive oil and season.<\/p>\n<p>3. <strong>Cook eggplant<\/strong>. Place eggplant in oven and cook for 14 minutes to start with.<\/p>\n<p>4. <strong>Prep all remaining ingredients<\/strong>.
