Chickpeas are such a versatile ingredient and have the perfect texture for patties!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"2250\" data-height=\"1508\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*HPP_-47PqJJc6GFMXqpsgg.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>\u00be can chickpeas, drained and rinsed<br \/>\u00bd\u20131 teaspoon garlic paste<br \/>\u00bd carrot, grated<br \/>1 egg, whisked<br \/>Zest and juice of \u00bc lemon<br \/>1 tsp soy sauce<br \/>1\u20132 pinches of chilli flakes (optional)<\/p>\n<p>To serve<\/p>\n<p>\u00bd baby cos lettuce<br \/>1 tablespoon yoghurt<br \/>1 wedge lemon<br \/>1 tablespoon chopped coriander<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li>Add chickpeas to a medium bowl and mash until a paste-like consistency (or use food processor).<\/li>\n<li>Add garlic paste, carrot, egg, lemon zest and juice and soy sauce to chickpeas and mix to combine. Season with salt and pepper.<\/li>\n<li>Roll mixture into patties.<\/li>\n<li>Heat a large fry-pan to medium heat then spray with oil. Cook patties for about 2 minutes each side, until golden and cooked through.<\/li>\n<li>While patties cook, separate lettuce leaves for lettuce cups or roughly chop. Prepare any remaining fillings for lettuce cups, if desired (e.g. diced tomato, cucumber or capsicum).<\/li>\n<li>To serve, place lettuce cups onto a plate, fill with 1\u20132 patties and any other fillings, if desired.
