Add a tablespoon sauerkraut to serve for some extra tummy goodness!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"3528\" data-height=\"2352\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*GyoSkXUrYXOD6TuzwUIsKg.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 1<\/p>\n<p><em>Ingredients<\/em><\/p>\n<p>1 teaspoon vinegar (e.g. white wine, apple cider)<\/p>\n<p>1 egg (or 30g chopped walnuts)<\/p>\n<p>1 slice thin wholegrain bread<\/p>\n<p>\u00bd avocado<\/p>\n<p>Pinch of chilli flakes (optional)<\/p>\n<p>Juice of \u00bc lime or lemon<\/p>\n<p><em>To serve<\/em><\/p>\n<p>1\u20132 tablespoons roughly torn coriander or parsley, or thinly sliced chives<\/p>\n<p>3 cherry tomatoes, cut in half<\/p>\n<p>\u00bc lime or lemon, cut into wedges<\/p>\n<p><strong>Bring<\/strong> a small pot of water to the boil.<\/p>\n<p><em>Method<\/em><\/p>\n<ol>\n<li>Add vinegar to pot of boiling water and reduce heat to a simmer. Carefully crack egg into simmering water and poach for about 2 minutes for eggs with runny yolk (4 minutes for firm yolks). Carefully remove egg from pot using a slotted spoon (to drain excess water).<\/li>\n<\/ol>\n<p>2. Cook bread in toaster, until golden.<\/p>\n<p>3. While egg and toast are cooking, place avocado, chilli flakes (if using) and first measure of lime\/lemon juice in a small bowl and roughly smash using a fork. Season to taste with salt and pepper.<\/p>\n<p><strong>To serve,<\/strong> top toast with smashed avocado and poached egg. Garnish with herbs and serve cherry tomatoes on the side.
