Boil a kettle. Pat pork very dry and season fleshy side with measure of salt. Place in reserved baking dish, skin side up, and set aside, uncovered for 5 mins to dry out skin.<\/span><\/div><\/li><li id=\"wprm-recipe-34287-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 20px;\"><span style=\"display: block;\">Generously salt pork skin and cook in oven for 60-70 mins (depending on thickness), until skin has crackled. Set pork aside to rest for at least 15 mins.
