Poach chicken in advance and store in an airtight container in the fridge for up to 3 days. Use in salads or soups as a protein addition!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"600\" data-height=\"400\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*g09cPPs49c0FaquBYXNLxA.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Makes 3 portions<\/p>\n<p><em>Ingredients<\/em><\/p>\n<p>400g lean chicken breast<\/p>\n<p>4 cups cold water (enough to cover chicken)<\/p>\n<p>3 Tbsp soy sauce<\/p>\n<p><em>Method<\/em><\/p>\n<p>1. Place chicken in a pot with water and soy sauce, cover with a lid and bring to a gentle boil on medium heat. As soon as it boils, turn off heat and leave to cook, still covered, for 15 minutes. The residual heat will cook chicken through. Use a sharp knife to test if the thickest part is cooked, juices should run clear.<\/p>\n<p>2. Drain chicken, discarding liquid. Slice, dice or shred chicken for Fresh Start lunches.<\/p>\n<p>3.
