Combine with a selection of your favourite salad ingredients and you have a super speedy lunch or dinner in no time!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"540\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*kFpcS6SOd4t2ikO197MDfQ.png\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 3<\/p>\n<p><em>Ingredients<\/em><\/p>\n<p>1 x 400g can chickpeas, drained and rinsed<\/p>\n<p>\u00bc red onion, very finely diced<\/p>\n<p>1 carrot, grated<\/p>\n<p>1 clove garlic, minced<\/p>\n<p>1 egg, whisked<\/p>\n<p>Zest of 1 lemon<\/p>\n<p>1 teaspoon salt<\/p>\n<p>\u00bc teaspoon freshy ground black pepper<\/p>\n<p>2 teaspoons ground cumin<\/p>\n<p>1 teaspoon ground coriander<\/p>\n<p>Pinch of chilli powder or ground cayenne<\/p>\n<p>1 teaspoon baking powder<\/p>\n<p>\u00bc cup whole wheat breadcrumbs<\/p>\n<p><em>For cooking<\/em><\/p>\n<p>1\u20132 teaspoons oil (or use spray oil)<\/p>\n<p><em>Method<\/em><\/p>\n<ol>\n<li>In a large bowl, mash chickpeas with a potato masher until thick and pasty. Add all remaining homemade falafel ingredients and mix well to combine.<\/li>\n<\/ol>\n<p>2. Using heaped tablespoons of falafel kofta mix and wet hands, shape mix into patties, about 1cm-thick.<\/p>\n<p>3. Heat oil in a large, non-stick fry-pan on medium heat.
