This will make more than enough hummus for four snacks (1\/4 cup per snack). Store in an airtight container in the fridge for up to 5 days. For an even easier snack, use a store-brought hummus, just make sure its good quality and only full of good stuff!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"3659\" data-height=\"2440\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*WksVgZ0Qa-L8eXgXy0zdOA.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 4<\/p>\n<p><em>Homemade hummus<\/em><\/p>\n<p>1 x 400g can chickpeas, drained and rinsed<\/p>\n<p>\u00bc teaspoon salt<\/p>\n<p>1 clove garlic, minced<\/p>\n<p>1 tablespoon tahini<\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>2 tablespoons water<\/p>\n<p>1\u20132 tablespoons lemon juice (to taste)<\/p>\n<p>2 tablespoons chopped parsley leaves and stalks (optional)<\/p>\n<p>Serves 1<\/p>\n<p><em>Veggie sticks<\/em><\/p>\n<p>\u00bd carrot, cut into 1 x 5cm sticks<\/p>\n<p>\u00bd Lebanese or \u00bc telegraph cucumber, cut into 1 x 5cm sticks<\/p>\n<p>\u00bd stick celery, cut into 1 x 5cm sticks<\/p>\n<p>\u00bd capsicum, core and seeds removed and sliced 1cm<\/p>\n<p>1. Put all homemade hummus ingredients in food processor or blender and blitz, until smooth. Add 1\u20132 tablespoons more water if ingredients are not combining.
