You can also pre-boil your eggs in advance for a quick meal addition or snack on the go!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"2895\" data-height=\"1930\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*nlzhPNHmcjZ_6FkCGoO2yw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 1<\/p>\n<p><em>Ingredients<\/em><\/p>\n<p><em>Vinaigrette<\/em><\/p>\n<p>1\u00bd teaspoons soy sauce (or fish sauce)<\/p>\n<p>\u00bc teaspoon runny honey<\/p>\n<p>1 teaspoon rice vinegar<\/p>\n<p>1 teaspoon lime juice<\/p>\n<p>\u00bd teaspoon sesame oil<\/p>\n<p>\u00bd teaspoon finely grated fresh ginger<\/p>\n<p><em>Leftover Asian noodle salad<\/em><\/p>\n<p>\u00bd cup leftover cooked wholegrain, vegetable based or rice noodles (e.g. soba, vermicelli, quinoa spaghetti, edamame fettuccine etc.)<\/p>\n<p>\u00bd carrot, grated<\/p>\n<p>\u00bd Lebanese cucumber, diced 1cm<\/p>\n<p>1 spring onion, thinly sliced<\/p>\n<p>Pinch of fresh, diced chilli (optional)<\/p>\n<p>\u00bc cup Asian herbs (choose any of coriander, mint, Vietnamese mint and Thai basil, or a mixture)<\/p>\n<p>1 tablespoon chopped roasted peanuts or cashew nuts<\/p>\n<p><em>Toppings (choose <\/em><strong><em>one<\/em><\/strong><em> of the below)<\/em><\/p>\n<p>1\u20132 soft boiled eggs, peeled (see recipe)<\/p>\n<p>60g cooked shredded chicken (e.g. poached\u200a\u2014\u200asee poached chicken recipe)<\/p>\n<p>100g crumbled tofu<\/p>\n<p><em>Method<\/em><\/p>\n<ol>\n<li>In a medium bowl, combine all vinaigrette ingredients. Add all Asian noodle salad ingredients and gently toss to combine. Season to taste with salt and pepper.<\/li>\n<\/ol>\n<p>2.
