With a ground almond base and nut butter base, these are well suited to our gluten and dairy free foodies.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"2000\" data-height=\"1333\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*09XC3GuU4rFzeuAWd2XTXw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>12 puffs<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1 banana, skin removed<br \/>1 egg<br \/>\u00be cup nut butter<br \/>\u00bc cup maple syrup or runny honey<br \/>1 teaspoon apple cider vinegar<br \/>\u00bd teaspoon baking soda<br \/>\u00be cup ground almond<br \/>\u00bc cup coconut thread or chips<br \/>1 teaspoon cinnamon<br \/>\u00bd teaspoon ground ginger<br \/>\u00bc teaspoon nutmeg<br \/>\u00bc teaspoon cardamom<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Preheat oven to 160C. Line an oven tray with baking paper.<\/p>\n<p>1. Mash banana in a large bowl. Crack eggs into bowl with banana and whisk together to combine. Add nut butter, maple syrup, vinegar and baking soda and mix to combine.<\/p>\n<p>2. Add all remaining cookie ingredients and mix well to combine.<\/p>\n<p>3. Using a two dessert spoons, spoon about 1 tablespoon worth of mixture onto prepared tray, flattening out a little into a rustic cookie shape. Repeat with remaining mixture.<\/p>\n<p>4. Bake in oven for 16\u201318 minutes, until golden. Remove tray from oven and allow cookies to cool completely on a wire rack.
