This refreshing and wholesome spring veggie salad is great for an evening picnic or BBQ.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"2121\" data-height=\"3000\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*bxaP1m6tXfWpWG9k0_uL1g.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 4<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p><em>Green goddess dressing<\/em><\/p>\n<p>\u00bd avocado<br \/>\u00bd tablespoon white wine vinegar<br \/>2 tablespoons tangelo juice<br \/>\u00bc cup mint leaves<br \/>\u00bc cup basil leaves<br \/>\u00bc cup chives<br \/>\u00bd tablespoon olive oil<br \/>\u00bd tablespoon tahini<br \/>2\u20134 tablespoons water<\/p>\n<p><em>Spring vegetable salad<\/em><\/p>\n<p>150g snow peas<br \/>1 \u00bd tangelo<br \/>\u00bd avocado<br \/>1 courgette<br \/>1 Lebanese cucumber<br \/>1 bunch Radish<br \/>100g wild rocket leaves<br \/>\u00bd tablespoon olive oil<br \/>\u00bd tablespoon white wine vinegar<\/p>\n<p><em>To serve<\/em><\/p>\n<p>20g pea tendrils<br \/>30g toasted pumpkin seeds<\/p>\n<p><strong><em>Methods<\/em><\/strong><\/p>\n<p><strong>Bring <\/strong>a small pot of water to the boil.<\/p>\n<p>1. Add all green goddess dressing ingredients (except water) to a food processor or blender and blend till smooth. Slowly add water until you have a consistency like a thin mayonnaise. Season well with salt and pepper to taste.<\/p>\n<p>2. Add snow peas to pot of boiling water, cook for about 1 minute until bright green. Drain and refresh under cold water. Set aside.<\/p>\n<p>3. Cut tangelo into segments; dice avocado 1cm; peel courgette into long thin ribbons; cut cucumber in half-length ways and slice 0.5cm on an angle; thinly slice radish. Add to a large bowl along with remaining spring vegetable salad ingredients and toss to combine. Season with salt and pepper.<\/p>\n<p><strong>To serve, <\/strong>place spring vegetable salad onto a platter or plates and drizzle over green goddess dressing.
