The next time you cook quinoa, cook a little more and put some aside for this filling snack.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"1306\" data-height=\"871\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*4VW5hG5A8Oxao8-L1hKp2A.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Makes 6 pieces<\/p>\n<p>1 courgette<br \/>1 red capsicum, core and seeds removed<br \/>1 tablespoon capers<br \/>1 clove garlic<br \/>4 eggs<br \/>\u00be cup cooked red quinoa, well drained<br \/>1 cup corn (defrost first if using frozen)<br \/>100g feta cheese, crumbled (reserve \u00bc for top)<br \/>Zest of 1 lemon<br \/>1 tablespoon lemon juice<br \/>1 tablespoon chopped thyme leaves<br \/>\u00bd teaspoon salt<br \/>Reserved feta<\/p>\n<p><strong>Preheat oven<\/strong> to 180C. Line a 20 x 15cm baking dish with baking paper<\/p>\n<p>1. Dice courgette \u00bd cm; dice capsicum 1cm; rough chop capers; mince garlic.<\/p>\n<p>2. Whisk eggs in a large bowl and add chopped veggies, cooked quinoa, corn, feta, lemon zest and juice, thyme and salt. Stir to combine and season well with freshly cracked black pepper.<\/p>\n<p>3. Pour mixture into prepared baking dish and sprinkle reserved feta over top. Bake for 40\u201345 minutes until cooked through and starting to become golden on top.
