Make these in bulk and store for up to 2\u20133 days in an airtight container.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"3000\" data-height=\"2000\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*qfkgOnFh-bFkp4u3yezuPw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Makes 12 Cups<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>100g spinach or silverbeet leaves (big baby leaves or torn large leaves will work best)<\/p>\n<p>12 eggs<\/p>\n<p><strong><em>Optional fillings<\/em><\/strong><\/p>\n<p>2 tomatoes, diced<br \/>2 tablespoons pitted black olives, chopped<br \/>3 tablespoons feta cheese, crumbled<br \/>3 tablespoon red onion, finely diced<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Preheat oven to 210\u00b0C. Spray a 12-hole muffin tin with oil or lightly grease (or as many cups as you wish to make).<\/p>\n<p>1. Place 2\u20134 spinach\/silverbeet leaves (depending on leaf size) into each muffin tin, to form a lining (a slight overhang is fine).<\/p>\n<p>2. Add optional fillings into muffin tin as desired and season with salt and pepper. Be careful not to overfill. Carefully crack an egg into each tin.<\/p>\n<p>3. Place muffin tray on middle-upper oven rack to bake for 12\u201314 minutes, or until set.<\/p>\n<p>4.
