Perfect for a summer lunch on the go or a fun breakfast alternative.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"822\" data-height=\"822\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*-nCsQcC282pVoQTKqF9wXA.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Ingredients<br \/><\/em><\/strong><em>Cannellini bean salsa<\/em><br \/>\u00bd cup frozen edamame beans<br \/>\u00bd can cannellini beans<br \/>1\/8 red onion<br \/>\u00bd lemon<br \/>\u00bc capsicum<br \/>80g can tuna in spring water, drained<br \/>\u00bc teaspoon extra-virgin olive oil<\/p>\n<p><em>To serve<br \/><\/em>\u00bd iceberg lettuce<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Bring a half-full kettle to the boil.<\/p>\n<p>1. Place edamame beans in a small, heat-proof bowl and cover with boiling water. Leave to cook for 4\u20135 minutes, until tender. Drain well.<\/p>\n<p>2. Drain and rinse cannellini beans then drain again well. Use a paper towel to absorb any extra moisture then add to a medium bowl.<\/p>\n<p>3. Finely dice red onion and capsicum and zest and juice lemon. Add all to bowl with cannellini beans, along with drained edamame, tuna and oil. Mix well to combine and season well.<\/p>\n<p>4.
