The citrus twist from the orange creates a unique and delicious flavour combo.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"1600\" data-height=\"1067\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*i0ZvUnoQeJdB13lqRHbuiA.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Makes 20 serves<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>2 tsp coconut oil<br \/>2 Tbsp maple syrup or honey<br \/>1 tsp cinnamon<br \/>\u00be tsp vanilla<br \/>Zest of 1 orange<br \/>2 Tbsp freshly squeezed orange juice<br \/>\u00bd cup sunflower seeds<br \/>\u00bd cup pumpkin seeds<br \/>\u00bd cup sliced almonds<br \/>\u00bd cup coconut thread<br \/>1\/3 cup chopped walnuts<br \/>\u00bd cup coconut chips (optional)<br \/>\u00bc cup dried goji berries (or diced, dried figs or apricots)<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Preheat the oven to 160\u00b0C. Line an oven tray with baking paper.<\/p>\n<p>1. Add coconut oil and maple syrup\/honey to a small pot and warm on a low heat until melted. Remove pot from heat and add cinnamon, vanilla and orange juice and stir to combine.<\/p>\n<p>2. While oil\/maple syrup is heating, combine sunflower seeds, pumpkin seeds, almonds, walnuts and coconut thread (or an assortment of your favourite nuts and seeds) in a large bowl.<\/p>\n<p>3. Add heated liquid to bowl and mix to coat.<\/p>\n<p>4. Spread mixture evenly over prepared tray and bake for 14\u201318 minutes, stirring every 5 minutes, until lightly toasted. Remove from oven and allow to cool.<\/p>\n<p>5. Once cool, stir through coconut chips (if using) and goji berries (or dried fruit).
