Our Fresh Start twist swaps out cream for yoghurt, as well as increasing the veggie serving, creating a nutritious and lower calorie alternative.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"1600\" data-height=\"1067\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*bwP6kCVSA-Af2PQ5DBQfJw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Creamy mushrooms<\/em><br \/>\u00bc brown onion, finely diced<br \/>\u00bd clove garlic, finely chopped<br \/>125g button mushrooms, thinly sliced<br \/>\u00bd courgette, grated<br \/>2 tbsp water<br \/>1 tbsp yoghurt<\/p>\n<p><em>To serve<\/em><\/p>\n<p>1 slice grainy bread, toasted<br \/>1 egg, poached or soft-boiled (optional)<br \/>1 lemon wedge (optional)<br \/>1 tablespoon chopped, fresh herbs<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1. Heat 1\/4 tsp oil a fry-pan on medium heat. Add onion and garlic to pan and cook, stirring occasionally, for 3\u20134 minutes, until softened.<\/p>\n<p>2. Add mushrooms, courgette and water and cook a further 4\u20135 minutes, until softened.<\/p>\n<p>3.
