Swapping in grated cauliflower and keeping the fresh and fragrant spices and herbs.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"540\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*HjIR8tC2-lsmEFILO7Ke9Q.png\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>\u00bd butternut pumpkin, diced 1cm until you have 1\u20132 cups worth<br \/>\u00bd carrot, diced 1cm<br \/>\u00bc teaspoon oil<br \/>225g grated cauliflower<br \/>\u00bc teaspoon allspice<br \/>\u00bc teaspoon ground cinnamon<br \/>\u00bd teaspoon olive oil<br \/>2 teaspoons sliced almonds<br \/>1\/8 red onion, finely diced<br \/>3 tablespoons crumbled feta cheese<br \/>2 teaspoons raisins, sultanas or diced dried dates<br \/>1 tablespoon lemon juice<br \/>2\u20133 tablespoons chopped, mixed mint and parsley<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>Preheat oven to 210\u00b0C. Line two ovens tray with baking paper.<\/p>\n<p>1. Toss pumpkin and carrot with oil on first prepared tray. Roast (on upper oven rack), for 15\u201318 minutes, until tender.<\/p>\n<p>2. Toss cauliflower pearls in a large bowl with allspice, cinnamon and olive oil until coated then season. Spread across second prepared tray, in a thin layer, and bake (below pumpkin) for about 12 minutes, until lightly golden and tender.<\/p>\n<p>3.
