These Easter cookies are easy to make, super fun to get the creative juices flowing, and you&#8217;ll even learn how to make <a href=\"https:\/\/www.myfoodbag.co.nz\/explore\/2020\/08\/05\/brighten-it-up-with-natures-food-colouring\/\" target=\"_blank\" aria-label=\"natural food colouring (opens in a new tab)\" rel=\"noreferrer noopener\" class=\"rank-math-link\">natural food colouring<\/a> to decorate them. Here&#8217;s to a delightfully delicious Easter weekend! <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"\/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-1024x1024.jpg\" alt=\"easter cookies\" class=\"wp-image-6222\" width=\"768\" height=\"768\" title=\"\" srcset=\"\/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-1024x1024.jpg 1024w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-300x300.jpg 300w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-150x150.jpg 150w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-768x768.jpg 768w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-1536x1536.jpg 1536w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-500x500.jpg 500w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-1080x1080.jpg 1080w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-1280x1280.jpg 1280w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-980x980.jpg 980w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260-480x480.jpg 480w, \/wp-content\/uploads\/2021\/03\/easter-cookie-202005-0260.jpg 1600w\" sizes=\"(max-width: 768px) 100vw, 768px\" \/><\/figure><\/div>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients<\/h4>\n\n\n\n<p><strong>Cookies<\/strong><br>110g butter, at room temperature<br>210g caster sugar<br>1 egg<br>1 tsp vanilla (optional)<br>250g plain flour<br>Flour for dusting<\/p>\n\n\n\n<p><strong>Icing<\/strong><br>400g icing sugar<br>50g butter, at room temperature<br>2 Tbsp hot water<br>Food colouring (see recipes below)<\/p>\n\n\n\n<p><strong>Natural Food Colouring<\/strong><br>1\/2 tsp ground turmeric (yellow)<br>1\/4 cup frozen raspberries (pink)<br>1\/4 cup frozen blueberries (purple)<br>1\/2 cup water<\/p>\n\n\n\n<p><strong>MAKES: 12\u201316 cookies<\/strong><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Easter Cookies<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Preheat oven to 180\u00b0C. Line an oven tray with baking paper.<\/li><li>In a large bowl, or bowl of your stand mixer, use electric beaters to cream together first measure of butter and sugar, about 3 minutes. <\/li><li>Beat in egg and vanilla. <\/li><li>Add flour, half at a time, mixing until incorporated. <\/li><li>Dust bench and rolling pin liberally with flour and roll dough 1cm thick. Use cookie cutters to cut into shapes, then place on a lined oven tray. Re-roll any off-cuts. <\/li><li>Bake for about 8\u201310 minutes, until cookies are just starting to turn slightly golden on the bottom (tops of cookies will have no colour).<\/li><li>While cookies bake, place icing sugar and second measure of butter in a large bowl or bowl of your stand mixer. Use electric beaters to beat for about 2 minutes, until combined. Add hot water and beat a further 3 minutes, until light and fluffy. Split icing into bowls (depending on how many colours you want) and add a few drops of different coloured food colouring to each bowl. Mix each bowl for a further minute, until combined. <\/li><li>Once Easter cookies have cooked, transfer to a wire rack to cool completely before decorating.<\/li><\/ol>\n\n\n\n<h4 class=\"wp-block-heading\">Food Colouring<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Pick your desired colour and place that ingredient, along with the water, in a small pot and bring to the boil on medium heat. Cook for about 2 minutes, until reduced slightly. Keep an eye on your pot as the water will evaporate quickly.<\/li><li>For turmeric mixture, use 1\/2 tsp in icing to add a yellow hue.<\/li><li>For either berry mixture, you will need to strain out the remaining berries. Place a strainer on top of your bowl and pour in your berry mixture. Use a spoon to push through as much liquid as you can, avoiding pressing seeds\/chunks through. Use 1 tsp of this liquid in your icing to colour it. <\/li><\/ol>\n\n\n\n<p>*Love our Easter cookies?
