Perfect addition to a fresh salad, and can be made with peas, corn or carrots!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"2250\" data-height=\"1508\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*xRv5R5zE8t0GMJ3B7Ijfzw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1 cup frozen corn<br \/>1 egg<br \/>3 Tbsp flour (e.g. wholemeal, coconut)<br \/>\u00bd tsp smoked paprika<br \/>\u00bc tsp salt<br \/>Pinch of baking powder<br \/>\u00bd courgette, grated<br \/>\u00bd spring onion, very thinly sliced<br \/>\u00bc cup grated Parmesan cheese<\/p>\n<p><em>To serve<\/em><\/p>\n<p>1 cup slaw<br \/>\u00bd tomato, diced<br \/>\u00bc\u2013\u00bd spring onion, thinly sliced<br \/>1\u20132 Tbsp chopped coriander<br \/>1\u20132 lime or lemon wedgese<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Place corn in a sieve and run under warm water. Set aside to drain.<\/p>\n<p>2. In a medium bowl whisk together egg, flour, paprika, salt and baking powder until smooth then add all remaining fritter ingredients, including corn.<\/p>\n<p>3. Heat a small, preferably non-stick fry-pan on medium-high heat. Spray oil and add tablespoon amounts of fritter batter to pan. Cook, in batches, for about 2 minutes each side, until golden and cooked through.<\/p>\n<p>4. While fritters cook, toss slaw, tomato, spring onion and coriander together in a small bowl, for a side salad.<\/p>\n<p>5. To serve, place fritters and salad onto a plate. Serve with a squeeze of lemon juice and garnish with more coriander, if desired.
