Use up leftover veges in this Asian inspired version.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"1125\" data-height=\"754\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*O8Q2uAbN2JeYSETDNicUAQ.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Broth<\/em><\/p>\n<p>2 cups chicken or veggie stock<\/p>\n<p>2 cups water<\/p>\n<p>2 spring onions, thinly sliced<\/p>\n<p>1 stick of lemongrass, thinly sliced (optional)<\/p>\n<p>2 cloves garlic, thinly sliced<\/p>\n<p>\u00bd\u20131 fresh chilli, thinly sliced (depending on heat preference)<\/p>\n<p>\u00bd broccoli, diced 1cm<\/p>\n<p>\u00bc cauliflower, diced 1cm<\/p>\n<p>\u00be pack fettuccine noodles<\/p>\n<p>200g prawns (fresh or frozen, defrosted) or tofu<\/p>\n<p>1 tsp soy sauce<\/p>\n<p><em>To serve<\/em><\/p>\n<p>1\u20132 Tbsp chopped coriander<\/p>\n<p>\u00bd lime, cut into wedges<\/p>\n<p>Fish sauce (to taste)<\/p>\n<ol>\n<li>\n<strong>Cook broth.<\/strong> In a large pot, bring stock and water to the boil. Once boiling, reduce to a simmer and add all remaining soup ingredients (except prawns\/tofu and soy sauce). Cook for 3\u20134 minutes, until veggies are beginning to soften.<\/li>\n<li>\n<strong>Add prawns and soy sauce<\/strong> and cook a further 3\u20134 minutes, until prawns are pink and cooked through (or tofu has cooked through) and noodles are tender.<\/li>\n<li>\n<strong>To serve,<\/strong> ladle into bowls, sprinkle with coriander and squeeze over lime juice.
