A comforting soup without the calorie hit!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"536\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*hPQttyX_ijgO5y-2e-Z8pw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>\u00bd tsp oil<br \/>\u00bd broccoli, cut into small florets and stalk diced 1cm<br \/>\u00bd clove garlic, finely chopped<br \/>1 cup stock<br \/>2 Tbsp lite sour cream<br \/>1 Tbsp grated Parmesan cheese<br \/>1 Tbsp parsley, chopped<br \/>\u00bc lemon, juiced<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li>Heat oil in a heavy-based pot on low heat. Cook broccoli and garlic for 5\u20136 minutes, until bright green and softened. Add stock, increase heat to medium and simmer for 5\u20136 minutes, until soft.<\/li>\n<li>Transfer mixture to a heat-safe blender or use a stick mixer to pur\u00e9e until smooth. Return soup to pot and return to a medium heat.
