{"id":642,"date":"2018-06-14T15:22:24","date_gmt":"2018-06-14T03:22:24","guid":{"rendered":"https:\/\/kalem92887712.wordpress.com\/2018\/06\/14\/greek-salad-with-chickpeas\/"},"modified":"2018-06-14T15:22:24","modified_gmt":"2018-06-14T03:22:24","slug":"greek-salad-with-chickpeas","status":"publish","type":"post","link":"https:\/\/www.myfoodbag.co.nz\/explore\/2018\/06\/14\/greek-salad-with-chickpeas\/","title":{"rendered":"Greek Salad with Chickpeas"},"content":{"rendered":"<p>This easy meal prep salad is full of yummy Greek flavours like feta, olives, walnuts and mint.<\/p>\n<figure><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*HmrMo3Qi9us0IV6yt8pQ-g.jpeg\" alt=\"\" title=\"\"><\/figure>\n<p>Serves 2<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Salad<\/em><\/p>\n<p>1x 400g can chickpeas, drained, rinsed and patted dry<em> (or see alternative)<\/em><\/p>\n<p>\u00bd cucumber, diced 1cm<\/p>\n<p>2 tomatoes, diced 1cm<\/p>\n<p>1 capsicum, diced 1cm<\/p>\n<p>1 Tbsp fresh mint, thinly sliced<\/p>\n<p>2 Tbsp olives, chopped<\/p>\n<p>30g feta cheese, diced 0.5cm<\/p>\n<p>Juice of \u00bc lemon<\/p>\n<p><em>To top<\/em><\/p>\n<p>1 Tbsp walnuts, roughly chopped<\/p>\n<p><em>Patties (optional, alternative)<\/em><\/p>\n<p>1x 400g can chickpeas, drained and rinsed<\/p>\n<p>1 egg yolk, whisked<\/p>\n<p>Zest and juice of \u00bc lemon<\/p>\n<p>1 tsp soy sauce<\/p>\n<p>\u00bd tsp oil<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1. <strong>Make salad.<\/strong> Toss all salad ingredients together in a medium bowl.<\/p>\n<p>2. <strong>Alternatively, make chickpea patties using chickpeas.<\/strong><\/p>\n<p>3. <strong>Prep patties.<\/strong> Add chickpeas to a medium bowl and mash until a paste-like consistency (or use food processor). Combine all patty ingredients (except oil) in a medium bowl and mix together well. Using a tablespoon measure and clean, damp hands, roll mixture into patties, about 1cm thick.<\/p>\n<p>4. <strong>Cook patties.<\/strong> Heat oil a medium, non-stick fry-pan on medium heat and cook patties for about 2 minutes each side, until golden and cooked through.
