Charring the corn makes for a smoky flavour, that pairs so well with the nutty freekah!<\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"1125\" data-height=\"754\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*vD5huKpNzwZoSMzckoNG-Q.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 1<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><em>Salad<\/em><\/p>\n<p>30g freekeh (or whole grain of your choice)<\/p>\n<p>\u00bc red onion, finely diced<\/p>\n<p>2\u20133 radishes, thinly sliced<\/p>\n<p>20g feta cheese, diced 1cm<\/p>\n<p><em>Toasted corn<\/em><\/p>\n<p>\u00bd cup frozen corn, defrosted<\/p>\n<p><em>Dressing<\/em><\/p>\n<p>\u00bd lemon or 1 lime, juiced<\/p>\n<p>\u00bd tsp extra-virgin olive oil<\/p>\n<p><em>Salad toppings<\/em><\/p>\n<p>\u00bc cup mixed mint and coriander leaves, chopped<\/p>\n<p>120g cooked tofu, 90g canned tuna in spring water or 80g lean, cooked chicken breast<\/p>\n<p>2 tsp pepitas or pumpkin seeds<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>\n<strong>Cook freekeh.<\/strong> Bring a small pot of salted water to the boil. Once boiling, cook freekeh for about 15 minutes, until tender with a slight bite. Drain well.<\/li>\n<li>\n<strong>Cook corn.<\/strong> Heat oil in a large fry-pan on high heat. Add corn and cook for 6\u20138 minutes, stirring occasionally, until beginning to char.<\/li>\n<li><strong>Prep salad ingredients.<\/strong><\/li>\n<li>\n<strong>Make dressing &amp; compile salad.<\/strong> In a medium bowl mix lemon and olive oil together. Add freekeh and corn to bowl with dressing, along with all remaining salad ingredients.
