Perfect for meal prep!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*gyaAsTJOHB02HMPzDi_csA.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 2<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1\u00bd cups frozen corn<br \/>1 garlic clove, minced<br \/>1 spring onion, very thinly sliced<br \/>125g white button mushrooms, finely diced<br \/>\u00bd cup chickpea or wholemeal flour<br \/>\u00bc tsp baking powder<br \/>\u00bd tsp paprika<br \/>Pinch of chilli flakes<br \/>2 eggs, whisked<br \/>\u00bc cup grated Parmesan cheese<br \/>1 tsp oil<\/p>\n<p><strong><em>To serve<\/em><\/strong><\/p>\n<p>2\u20133 tsp yoghurt<br \/>A few picked coriander leaves<\/p>\n<ol>\n<li>Bring a small pot of salted water to the boil.<\/li>\n<li>\n<strong>Cook corn.<\/strong> Cook corn in pot of boiling water for about 1 minute. Drain well.<\/li>\n<li>\n<strong>Prep &amp; make fritter batter.<\/strong> Combine all fritter ingredients (except oil) in a medium bowl (the mixture will be quite a dry batter).<\/li>\n<li>\n<strong>Cook fritters.<\/strong> Heat half the oil in a medium, non-stick fry-pan on medium heat. Using clean, damp hands and about 2 tablespoons worth of batter, roll mixture into a ball then flatten slightly and place into pan. Cook fritters, in batches, for about 2 minutes each side.
