Best enjoyed as is, or topped with chicken for added protein.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*uIP6c1deJH-8gJU8mCT-yw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 2<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>\u00bd bag cauli pearls\u00a0<br \/>\u00bd head broccoli, grated, finely chopped or pulsed in food processor<br \/>\u00bc brown onion, finely diced<br \/>1\u20132 cloves garlic, minced<br \/>1 cup vegetable stock<br \/>1 cup frozen peas\u00a0<br \/>1 tsp salt<br \/>\u00bc cup grated Parmesan cheese\u00a0<br \/>\u00bc cup lite sour cream<\/p>\n<p><strong><em>To serve<\/em><\/strong><\/p>\n<p>1 Tbsp chopped parsley<br \/>A few slices shaved Parmesan cheese<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Prep &amp; cook risotto. Heat oil in a large fry-pan on medium-high heat. Add cauliflower, broccoli, onion and garlic to pan and cook, stirring regularly, for about 6 minutes, until softening.<\/p>\n<p>2. Stir in stock, peas and salt. Cover and cook a further 10\u201312 minutes, until liquid is absorbed. Stir though Parmesan and sour cream and remove from heat. Season well with salt and freshly ground black pepper.<\/p>\n<p>3. Prep garnishes.<\/p>\n<p>4.
