Enjoy as is, or with a crunchy slice of wholegrain toast.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*67dbYz1rA_nadiKnNt6-Vw.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 1<\/em><\/strong><\/p>\n<p><em>Ready in 20 mins<\/em><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>\u00bd tsp olive oil<br \/>\u00bd onion, finely chopped<br \/>1 stalk celery, thinly sliced<br \/>1 carrot, cut in half lengthways and thinly sliced<br \/>1\/8 tsp ground ginger<br \/>\u00bc tsp ground cinnamon<br \/>Pinch of chilli flakes (optional)<br \/>\u00be can brown lentils, drained and rinsed<br \/>1 cup water<br \/>\u00bd can chopped tomatoes<br \/>1 cup vegetable stock<br \/>\u00bd tsp salt<\/p>\n<p><strong><em>To serve<\/em><\/strong><\/p>\n<p>\u00bc cup chopped parsley and coriander<br \/>\u00bc lemon, cut into wedges<br \/>1 Tbsp unsweetened yoghurt (optional)<\/p>\n<p><strong><em>Method<br \/><\/em><\/strong>1. Prep &amp; cook soup. Heat oil in a medium pot on low-medium heat. Add onion, carrot and celery and cook, stirring, for 3\u20134 minutes. Add ginger, cinnamon, chilli flakes (if using) and a pinch of salt and cook for 30 seconds, until fragrant.<\/p>\n<p>2. Add lentils, canned tomatoes, water, stock and salt, bring to the boil and simmer for 8\u201310 minutes, until carrots have softened.<\/p>\n<p>3. Prep garnishes. Fold herbs through soup once cooked and season.<\/p>\n<p>4.
