Perfect for warming you up on a chilly day!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*c_6YnQDjt4vMNVK_gJNBUQ.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 2<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1 onion, roughly diced<br \/>1 capsicum, cut into thin strips<br \/>1 carrot, thinly sliced<br \/>2 tsp oil<br \/>\u00bd tsp salt<br \/>1x 400g can chopped tomatoes<br \/>2\u00bd tsp harissa paste (store-bought)<br \/>\u00be\u20131 Tbsp leftover spice mix \u2764<br \/>Zest and juice of \u00bc lemon \u2764<br \/>1 tsp honey<br \/>\u00bd tsp salt<br \/>1 cup vegetable stock<br \/>\u00be can chickpeas, drained \u2764<br \/>\u00bd cup frozen corn \u2764<br \/>\u00bc cup chopped parsley<\/p>\n<p><strong><em>Method<br \/><\/em><\/strong>Preheat the oven to 200\u00b0C. Line an oven tray with baking paper.<\/p>\n<p>1. Roast veg. Toss onion, carrot, capsicum and garlic cloves on prepared tray with oil and salt. Roast for about 14 minutes, until tender.<\/p>\n<p>2. Start soup. Add canned tomatoes, harissa paste, spice mix, lemon juice and zest, honey, salt and stock to a medium pot on high heat. Bring to the boil, then reduce to a simmer. Add chickpeas and corn and continue to simmer for 3\u20134 minutes.<\/p>\n<p>3. Finish soup. Once veg has finished roasting, remove from oven, squeeze garlic out of cloves and roughly chop. Add garlic and veggies to pot with soup and cook a further 3\u20134 minutes.<\/p>\n<p>4.
