Perfect for breakfast, light lunch or a hearty snack!<\/em><\/p>\n<figure><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*h_EKKg7ZxZ9kmEmu1JK35Q.jpeg\" alt=\"\" title=\"\"><\/figure>\n<p><strong><em>1 serve<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><br \/>\n\u00bc brown onion, finely diced<br \/>\n\u00bd clove garlic, minced (optional)<br \/>\n1 Tbsp tomato paste<br \/>\nPinch of dried Italian herbs<br \/>\n\u00bd can cherry tomatoes<br \/>\n\u00be can mixed beans, drained and rinsed<br \/>\n1 tsp balsamic vinegar<br \/>\n\u00bc tsp honey or maple syrup (optional)<br \/>\n1 handful leafy greens (e.g. spinach, baby kale)<\/p>\n<p><strong><em>To serve<\/em><\/strong><\/p>\n<p>1 tsp white vinegar<br \/>\n1 egg<br \/>\n1 Tbsp torn parsley or basil<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li>Bring a small pot of water to a rolling boil.<\/li>\n<li>\n<strong>Prep &amp; cook beans. <\/strong>Heat 1\/4 tsp oil in a medium pot on medium heat. Add onion, garlic and a pinch of salt and cook, stirring, for 2\u20133 minutes, until soft. Add tomato paste and herbs and cook for a further 30 seconds, until fragrant.<\/li>\n<li>Add 1\/4 tsp salt and beans and cook for 1 minute, then add tomatoes, vinegar and honey or maple syrup and bring to a simmer. Allow to simmer for 4\u20135 minutes, until sauce has thickened.<\/li>\n<li>\n<strong>Poach egg. <\/strong>While beans are simmering, add vinegar to pot of water, stir to start a whirlpool in water then crack in egg. Leave to poach for about 1 minute, until whites are cooked and yolk has set.
