A delicious Fresh Start friendly solution for your next Summer BBQ!<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*e1BzbVv7NeUHIt8Q7TA7NQ.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 2<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p><strong><em>Patties<\/em><\/strong><\/p>\n<p>\u00bd x 400g can lentils, drained and rinsed\u00a0<br \/>\u00be x 400g can black beans, drained and rinsed\u00a0<br \/>\u00bc brown onion, diced\u00a0<br \/>1 egg, whisked<br \/>3 Tbsp wholemeal breadcrumbs<br \/>2 tsp smoked paprika<br \/>1 tsp ground cumin<\/p>\n<p><strong><em>Salsa<\/em><\/strong><\/p>\n<p>\u00bd cup frozen corn\u00a0<br \/>\u00bc avocado, diced\u00a0<br \/>1 tomato, diced 1cm<\/p>\n<p><strong><em>To serve<\/em><\/strong><\/p>\n<p>\u00bd cos lettuce, leaves separated\u00a0<br \/>2 Tbsp lite sour cream<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<ol>\n<li>Preheat oven to 210\u00b0C.<\/li>\n<li>Prep &amp; make mixture. Add all patty ingredients and 1 tsp salt to a food processor and blend for about 1 minute, until combined.<\/li>\n<li>Using about 2 tablespoons worth, roll mixture into balls then flatten into patties, about 1cm thick. Place on a lined oven tray, brush with \u00bd tsp oil and set aside in fridge for at least 10 minutes to firm up.<\/li>\n<li>Bake patties. After patties have chilled, transfer to oven to bake for 20\u201322 minutes, until golden and cooked through. Turn once during cooking.<\/li>\n<li>Prep &amp; make salsa. While patties cook, cook corn in pot of boiling water for about 1 minute. Drain, rinse under cold water and drain again well. Add to bowl, along with avocado, tomato and a small drizzle of vinegar.
