This recipe uses up leftover coconut milk for deliciously rich pancakes the whole family will love.<\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*5pq8IMNus1x_5cNGs6DZ6Q.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p>Serves 2<\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>Pancakes<\/p>\n<p>\u00bd cup flour (buckwheat, wholemeal)<\/p>\n<p>\u00bd tsp baking powder<\/p>\n<p>1 Tbsp honey or maple syrup<\/p>\n<p>2 eggs, whisked<\/p>\n<p>\u00be cup lite coconut milk<\/p>\n<p>To serve<\/p>\n<p>1 piece stone fruit, thinly sliced<\/p>\n<p>2 tsp coconut thread<\/p>\n<p>2 Tbsp unsweetened yoghurt<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Make batter. In a bowl mix together flour, baking powder and a pinch of salt. In another bowl add honey\/maple syrup, eggs and coconut milk and mix until well combined. Mix the wet ingredients into the dry and stir until incorporated. Be careful not to over-mix.<\/p>\n<p>2. Cook pancakes. Heat \u00bc tsp oil in a non-stick fry-pan to medium heat. Add batter to pan to form small pancakes, using about 2 Tbsp of mixture. Cook for about 2 minutes, until bubbles begin to appear on pancake, then flip and cook a further 1\u20132 minutes, until golden brown.<\/p>\n<p>3. Prep serving ingredients.<\/p>\n<p>4.
