Perfect alongside some grilled meat or tofu for a high protein meal.<\/em><\/p>\n<figure>\n<p><img decoding=\"async\" data-width=\"800\" data-height=\"533\" src=\"https:\/\/cdn-images-1.medium.com\/max\/800\/1*w7na70TMUU8kJdN2ZoWeUA.jpeg\" alt=\"\" title=\"\"><br \/>\n<\/figure>\n<p><strong><em>Serves 2<\/em><\/strong><\/p>\n<p><strong><em>Ingredients<\/em><\/strong><\/p>\n<p>1 cup frozen peas<\/p>\n<p>\u00be x 400g can chickpeas, drained and rinsed<\/p>\n<p>1\u20132 handfuls snow peas, cut in half lengthways<\/p>\n<p>1\u20132 handfuls leafy greens (e.g. mesclun, rocket, spinach)<\/p>\n<p>1 spring onion, thinly sliced<\/p>\n<p>Juice of \u00bc lemon<\/p>\n<p>\u00bd fresh chilli, thinly sliced (optional)<\/p>\n<p><strong><em>Method<\/em><\/strong><\/p>\n<p>1. Bring a pot of salted water to the boil.<\/p>\n<p>2. Cook peas. Cook in pot of boiling water for 1\u20132 minutes, until bright green and just tender. Drain, rinsed under cold water and drain again well.<\/p>\n<p>3. Prep salad. Combine all salad ingredients in a bowl with \u00bd tsp extra-virgin olive oil and \u00bctsp salt. Toss together and season.<\/p>\n<p>4.
