{"id":717,"date":"2020-03-11T17:41:34","date_gmt":"2020-03-11T04:41:34","guid":{"rendered":"https:\/\/kalem92887712.wordpress.com\/2020\/03\/11\/edamame-grapefruit-fennel-avocado-salad\/"},"modified":"2023-09-08T10:20:31","modified_gmt":"2023-09-07T22:20:31","slug":"edamame-grapefruit-fennel-avocado-salad","status":"publish","type":"post","link":"https:\/\/www.myfoodbag.co.nz\/explore\/2020\/03\/11\/edamame-grapefruit-fennel-avocado-salad\/","title":{"rendered":"Edamame, Grapefruit, Fennel &#038; Avocado Salad"},"content":{"rendered":"<figure><\/figure>\n<p>Serves 4<\/p>\n<p>2 cups frozen edamame beans<\/p>\n<p>150g baby spinach<\/p>\n<p>1\/2 fennel bulb, thinly sliced &amp; fronds reserved for serving<\/p>\n<p>1\/2 courgette, very thinly sliced into rounds (or use a mandolin)<\/p>\n<p>1 pink grapefruit, peeled, halved then thinly sliced<\/p>\n<p>1\/2 avocado, halved and thinly sliced<\/p>\n<p>2 Tbsp shelled pistachio nuts, chopped<\/p>\n<p>1\/2 lemon, juiced<\/p>\n<p>1 tsp extra virgin olive oil<\/p>\n<ol>\n<li>Bring a pot of salted water to the boil.<\/li>\n<li>Cook edamame. Cook edamame in pot of boiling water for 2\u20133 minutes, until bright green and tender. Drain well, rinse under cold water to cool and drain again well.<\/li>\n<li>Prep remaining salad ingredients.<\/li>\n<li>Make salad. In a bowl, toss spinach, fennel, courgette, edamame, grapefruit, avocado and reserved fennel fronds together with lemon juice and extra virgin olive oil.
