This is because each different type of oil has its own smoke point. <em>A smoke point is the temperature at which the oil will begin to smoke, similar to how 100<\/em><em>\u00b0<\/em><em>C is the boiling point for water.<\/em><\/p>\n\n\n\n<p>Smoking oil indicates the fat molecules are breaking down, and in turn, creating nasty free radicals.
