While the bread is toasting, slice the mozzarella and tomato. Bring to the boil, reduce to a simmer and cook 5\u20136 minutes (hard-boiled). Drain and cool eggs under cold tap, peel shells off eggs under cold running water.\u202f&nbsp;<\/li><\/ol>\n\n\n\n<ol class=\"wp-block-list\" start=\"2\"><li>Finely chop the spring onion. Place eggs in a medium bowl and mash with a fork. Add yoghurt and finely chopped spring onion, season with salt and pepper and stir to combine well. Meanwhile, slice the mushrooms. Heat oil in a small fry-pan to medium-high heat, add mushrooms and cook for 1-2 minutes to soften. Add the balsamic vinegar and toss to coat, remove from heat and set aside.&nbsp;<\/li><\/ol>\n\n\n\n<ol class=\"wp-block-list\" start=\"2\"><li>Place a few rocket leaves on each piece of bread.
