Perfect Pancakes

Ingredients

Pancakes

  • 1 1/2 cup flour (GF if required)
  • 2 Tbsp sugar
  • 2 tsp baking powder (GF if required)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups milk
  • 2 eggs
  • 60 g butter, melted

To Serve

  • Chopped fruit or berries
  • Yoghurt or whipped cream
  • Maple syrup

Instructions

  • Add flour, sugar, baking powder, baking soda and salt to a large bowl and whisk to combine.
  • Add milk, eggs and butter and whisk to combine, careful not to over-mix or your pancakes will be chewy.
  • Melt a knob of butter in a non-stick fry-pan on medium-high heat. Use a ¼ cup measure to spoon mixture into the pan, cook for about 1 minute each side, waiting for bubbles to pop before flipping.

  • Serve pancakes topped with yoghurt, fruit, maple syrup or whatever tickles your fancy!
