Mexican Chicken Wraps, Serves 2

This super quick and easy Mexi-spiced chicken wrap is perfect for when you want delicious food, at no extra cost to your time. In just 10 minutes you can be enjoying flavourful spiced pan-seared chicken with crunchy slaw and chipotle aioli for lunch.

Ingredients

Chicken

  • ½ tsp oil ^
  • 300 g diced free range chicken breast
  • ½ pack smoky Mexican spices

Slaw

  • 200 g sliced cabbage
  • 1 Tbsp white wine vinegar

To serve

  • 1 pack wheatmeal tortillas
  • 2 Tbsp chipotle aioli

    Instructions

    • Heat oil in a frypan on medium-high heat. Add chicken, measure of spices and a pinch of salt and cook for 6-8 minutes, tossing occasionally, until golden and cooked through. Season to taste with salt and pepper.
    • Mix all slaw ingredients in a bowl. Place tortilla on a plate and microwave for 20-30 seconds to warm.
    • Fill tortilla with chipotle aioli, slaw and chicken. Serve any extra slaw on the side.
