Preheat oven to 200°C bake.
Cut potatoes into wedges. Toss with oil on a lined baking tray, season and roast in oven for 25-30 minutes.
Remove pork from pack and pat dry. Slice into 1cm-thick slices and toss on a second lined oven tray with salt and pepper. Bake in over for 20-25 minutes, until hot through. Turn halfway through cook time.
Once potatoes and pork are cooked, transfer to the same baking tray, drizzle over salsa verde and enjoy.
