High Protein Kūmara and Beef Bowls

Ingredients

  • 2 large orange kūmara (around 400g), tossed in oil, salt and pepper
  • 2 tbsp homemade taco seasoning 1 tsp garlic powder, 1 tsp oregano, 2 tsp ground cumin, 2 tsp smoked paprika, 1/2 tsp chilli powder.
  • 2 tbsp honey
  • 1 tsp chilli flakes
  • 600 g lean beef mince
  • 1 cup lite cottage cheese
  • 1 avocado thinly sliced
  • 100 g rocket
  • 50 g pink pickled onion (thinly sliced red onion, left for 30 mins or longer, submerged in a 1:1 white vinegar and water solution)

Instructions

  • Preheat oven to 200°C (or 180°C fan bake). Dice kumara 2cm. Toss with oil on 1-2 lined oven trays and spread in a single layer. Season with salt and pepper and roast for 30-35 minutes, until tender and golden. Turn once during cooking.
  • While kūmara roasts, prepare your other ingredients. Mix all your spices to make your homemade taco seasoning. Add honey into a small microwave safe bowl, along with chilli flakes. Heat this in 10-15 second increments until runny.
  • Heat oil in a frypan on low-medium heat. Add mince and cook until starting to brown. Add in 2 tbsp of your taco seasoning and cook until the edges of the mince start to crisp slightly (approx. 10-12 mins).
  • Once everything is finished cooking, you can assemble your bowl. Place kūmara, mince, cottage cheese, rocket and sliced avocado in your bowl, drizzle with hot honey and top with pickled onions, salt and pepper! Enjoy.
