Middle Eastern Grain Bowl

Ingredients

  • 1 pack pre cooked brown rice & quinoa mix or 2x 125g cups
  • 1 Lebanese cucumber peeled into ribbons
  • 1 capsicum sliced 1cm
  • 50 g baby spinach
  • 50 g feta cheese crumbled
  • ½ lemon juiced
  • 2 Tbsp hummus
  • 1 Tbsp sunflower seeds
  • 1 Tbsp pumpkin seeds

Instructions

  • Cook rice & quinoa mix in microwave as per packet instructions
  • Peel cucumber into ribbons and slice capsicum
  • Once rice has cooked, toss in a large bowl with cucumber, capsicum and spinach. Squeeze in lemon juice, season with salt and pepper and toss to combine
  • Serve salad in bowls, dollop over hummus and sprinkle with seeds. If you have time, toast seeds for 1-2 min a small dry frypan on medium-high heat for extra flavour
