1packpre cooked brown rice & quinoa mixor 2x 125g cups
1Lebanese cucumberpeeled into ribbons
1capsicumsliced 1cm
50gbaby spinach
50gfeta cheesecrumbled
½lemonjuiced
2Tbsphummus
1Tbspsunflower seeds
1Tbsppumpkin seeds
Instructions
Cook rice & quinoa mix in microwave as per packet instructions
Peel cucumber into ribbons and slice capsicum
Once rice has cooked, toss in a large bowl with cucumber, capsicum and spinach. Squeeze in lemon juice, season with salt and pepper and toss to combine
Serve salad in bowls, dollop over hummus and sprinkle with seeds. If you have time, toast seeds for 1-2 min a small dry frypan on medium-high heat for extra flavour
