Carrot Cake Bliss Balls

Ingredients

  • 1 carrot
  • 1/2 cup pitted dates
  • 1/4 cup dried apricots
  • 1 cup jumbo rolled oats
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp maple syrup
  • 1/2 cup dessicated coconut

Instructions

  • Grate carrot, add to blender with remaining ingredients, except desiccated coconut.
  • Blend until mixture comes together. 
  • Place desiccated coconut on a plate. 
  • Roll tablespoon size amount of carrot mixture into balls. 
  • Roll balls in coconut.  
  • Place in fridge for minimum of 30 minutes. Store in an airtight container for up to 5 days.
