dried apricots

jumbo rolled oats

maple syrup

dessicated coconut
Instructions
Grate carrot, add to blender with remaining ingredients, except desiccated coconut.
Blend until mixture comes together.
Place desiccated coconut on a plate.
Roll tablespoon size amount of carrot mixture into balls.
Roll balls in coconut.
Place in fridge for minimum of 30 minutes. Store in an airtight container for up to 5 days.
