PB & J Chia Pudding with Chopped Peanuts & Berries
Servings 3(Great meal prep for 3 days!)

Ingredients
Chia Pudding:
3/4cupmilkof your choice
1cupwater
1tspfreeze fried raspberry powderoptional
1/2tspvanilla extract
2tsphoney
6tbspchia seeds
To Serve:
2tbsppeanut butter
1/2cupberriesfresh or frozen
2tbspchopped peanuts
2tspfreeze dried raspberriesoptional
Instructions
Make chia pudding: Add milk, water measure, raspberry powder (if desired), vanilla and honey to a bowl and whisk until honey has dissolved. Whisk in chia until well combined. Stir well and portion into 3 containers. Place in fridge to set for at least 3 hours, or overnight.
Serve: Each day, top each chia portion with 2 teaspoon peanut butter and fresh fruit or frozen berries of choice. Sprinkle over 2 teaspoon chopped peanuts and crumble over some freeze-dried raspberries, if desired.
